No matter your age, no matter where you come from, ice cream is a universal symbol of celebration. After doctor's appointments and rehab visits with their parents, Lee and his family always ended with the same ritual: "Let's go get an ice cream." In good times and hard times, ice cream meant you made it through.

Lee wanted his classes — which tackle genuinely challenging subjects — to feel that same way: like a place where hard things are met with warmth, not dread. A scoop of courage. A cone of clarity.

The spirit behind the brand became personal in a new way recently. Lee's family navigates serious food allergies, so he developed a tofu-based ice cream for one of his children who can't have eggs or milk. When the family sat down to taste his chocolate-coffee, soy-based creation, the kids declared it the best thing they'd ever eaten.

That moment says everything: with a little creativity and a lot of care, even the most restrictive circumstances can become something wonderful.
